Nuts are probably my favorite in between meals snack. Nuts are good sources of protein, fiber, and healthy fats. You just have to be careful not to over do it when it comes to eating nuts because they are also packed with calories. Also, make sure you are not allergic to them. The Banana Nut Muffins recipe is the courtesy of personal trainer, Chris George. I’m out of my element in the kitchen,but this is an easy recipe even for yours truly.
Banana Nut Muffins
First, pre-heat your oven to 350°. Then break out you blender and in it mix the following:
- 2 overripe bananas
- 1 egg
- 1/2 cup almond milk
- 1/4 cup Greek yogurt
- 1 teaspoon vanilla extract
Pour all of that into a bowl and then add:
- 1/4 cup of crushed walnuts
- 1/2 cup of coconut flour
- 1/2 cup of oats
- 1/3 cup of vanilla protein powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of baking powder
Bake for 20 to 22 minutes
This recipe will make 12 muffins and each muffin provides the following:
- 87 calories
- 1 gram of fat
- 6 grams of protein
- 13 grams of carbohydrates
- 4 grams of fiber
