Raspberry Walnut Chicken Salad to Die For

raspberry walnut chicken saladIf you’re in a hurry and want to prepare a healthy meal quickly try this raseberry walnut chicken salad recipe. Chicken is a low fat source of protein. Walnuts are high in antioxidants especially vitamin E.  Walnuts are also high in fiber, the B vitamins, magnesium, and omega-3 fatty acids.

Walnuts made a big splash in the news a year ago when the FDA threatened Diamond Foods for making health claims of their walnuts, thus promoting its walnuts for health purposes. And, we wonder why we’ve become a junk food sociey.

Raspberry Walnut Chicken Salad

Ingredients

1 cup salad greens

1 can (5 oz.) chicken, drained

1 can (8 oz.) chickpeas, drained

¼ cup chopped walnuts (freeze leftover nuts)

4 Tbsp raspberry vinaigrette dressing

 

Directions

1.       Split the greens, chicken, chickpeas, and walnuts between 2 large salad bowls.

2.       Drizzle each bowl with 2 Tbsp of the vinaigrette.

3.       Serve 2 apricot halves and 2 gingersnap cookies each for dessert.
