Arugula Salad with Sliced Steak

arugula saladHealthy Reasons to Eat this Arugula Salad with Sliced Steak.

Try this sliced steak and arugula salad.  This recipe contains a lot of color which means it is rich in phytochemicals. It calls for red or yellow beets, sweet potato, and the leafy greens.

Arugula is a salad green low in calories and one of the best foods to raise nitric oxide levels. Nitric oxide is probably the most important molecule in the body and plays a role in many of its  biochemical reactions. Perhaps, the biggest health benefit of nitric oxide is it improves blood flow by improving the ability of blood vessels to relax. But, nitric oxide also enhances the immune system and improves how are brain cells communicate with another.

Beets are another food that improve nitric oxide production. Drinking beet juice has been shown to improve VO2max during exercise testing. This means you can exercise longer with less effort.  Beets are also high in antioxidants and anti-inflammatory compounds.

Sweet potatoes are terrific for raising vitamin A levels and like beets contain ample amounts of antioxidants and anti-inflammatory compounds.  They are also lower glycemic than white potatoes.

Flank steak is obviously a good source of protein and lower in calories and fats compared to other cuts of beef only surpassed by round cuts in these areas.

Vinegar has been used for centuries in treating diabetes.  Vinegar delays the absorption of carbohydrates in a meal limiting sugar from hitting the bloodstream too quickly thus limiting the insulin surge following consumption of carbohydrates.
