Moroccan Baked Eggs with Red Peppers & Spinach

Here’s a healthy recipe from the  Huffington Post for Moroccan Baked Eggs with Red Peppers &  Spinach.

Eggs are a source of complete protein meaning they contain all the essential amino acids. Both the egg white and yolk are high in protein. Beyond its protein content, much of the remaining nutrients reside with the yolks. Yolks are high in choline which is important for brain health. Yolks also contain vitamin D.

Some are concern that the yolks are high in cholesterol and saturated fats, but some studies have shown no elevation in cholesterol after eating 12 whole eggs a week.  Also, the incidence of heart disease does not increase with egg consumptiom.The body needs cholesterol and what it does not get in the diet it will make on its own.

Spinach is a great rich source of vitamin A , vitamin C, vitamin E, vitamin K, vitamin B6, niacin, omega-3 fatty acids, and many minerals like magnesium, manganese, copper, and zinc. The nitrites and nitrates in spinach produce nitric oxide which improves blood flow and enhances immune system function.

Red peppers are high in vitamin C and vitamin A, two antioxidants. Antioxidants limit cell damage caused by free radicals that can lead to the development of cancer and disease.
